REESE'S CHOCOLATE CAKE

Ingredients:

1 3/4 cups all-purpose flour

1 3/4 cups granulated sugar

3/4 cup unsweetened cocoa powder

1 teaspoon baking powder

2 teaspoons of baking soda

2 large eggs

1 teaspoon vanilla

1 cup freshly brewed strong hot coffee (decaf works too!)

1 cup buttermilk

1/2 cup canola oil

1 teaspoon salt

8-10 Reese's Peanut Butter Cups (used in final step)

Instructions:

Preheat oven to 350º Fahrenheit. Grease and flour 2 round 9-inch cake pans.

Step 1: To make the cake, put cocoa, flour, sugar, baking soda, baking powder and salt in a large bowl. Use a wire whisk to whisk the ingredients together.

Step 2: With an electric mixer or stand up mixer, mix the oil, buttermilk, eggs, and vanilla together.

Step 3: Slowly add in the mixture of dry ingredients (From Step 1) and mix on a slow/low setting.

Pro Tip: Be sure not to overmix the ingredients so your cake will be nice and fluffy.

Step 4:  Add your favorite kind of coffee (you can use decaf) and combine everything well. The batter should have a thin and runny consistency.

Step 5: Pour the cake batter mix into your prepared pans and bake for about 26 minutes. Check the cake by sticking a toothpick in the center, if the toothpick comes out clean, your cake is done!

Step 6: Once cakes are fully baked remove them from the pan and place them onto a cooling rack. While the cakes are cooling you can begin to make the frosting!

PEANUT BUTTER FROSTING

Ingredients:

1/2 cup butter softened

3 tablespoon milk or heavy cream

1.5 cups creamy peanut butter

2 cups powdered sugar

Instructions:

Step 1: In a medium-size bowl use an electric mixer to cream together the butter and peanut butter. Mix the ingredients for approximately 3 minutes.

Step 2: Add 1 cup of powdered sugar and mix until blended.

Step 3: Add 2 tablespoons of heavy cream and beat until completely blended.

Step 4: Add 1 cup of powdered sugar. Mix for an additional 2 minutes.

You can test the frosting to see if it needs another tablespoon or two of heavy cream before spreading on your cake. If so, add them in and mix well together!

CHOCOLATE BUTTERCREAM

Ingredients:

1 cup salted butter (room temperature)

1/2 teaspoon salt

1/2 cup cocoa powder

4 tablespoons heavy cream

2 teaspoons vanilla extract

3 1/2 cups powdered sugar

Instructions:

Step 1: With a spatula, spoon or stand up mixer (using a beater blade), beat the butter for 2-3 minutes until it is smooth, creamy in texture, and thick in consistency. Look for an off white color as a sign that it's ready.

Step 2: Add in vanilla and salt, mix the ingredients well until incorporated throughout the buttercream.

Step 3: In a mixing bowl, slowly add in the powdered sugar and cocoa powder. This can be done in increments by adding about 1/4 or less while mixing. Mix the ingredients, If using an electric mixer, mix on a low setting.

Step 4: Add the heavy cream slowly, continue mixing slowly until well mixed.

Step 5: Beat the mixture for 2 minutes on medium speed until rich, smooth and creamy.

FINALLY..... REESE'S CAKE TIME!

Step 1: Place one layer of cake on a pan or plate.

Pro Tip: Assemble your cake in a re-useable cake container so it's easy to store after slicing!

Step 2: Frost the top of one cake with the peanut butter frosting. Then place the other cake round on top of the peanut butter frosting layer. For a rich and decadent cake, use the chocolate buttercream to cover the cake entirely.

Step 3: Take 8-12 Reese's Peanut Butter Cups, crumble, then place on top of the cake.

Viola! You've just made an irresistible Reese's Cake that will surely be a huge hit with family, friends or co-workers.

Bonus Food Hack: You can keep your Reese's cake moist by eating it all in one sitting! ;)
